Smoke on a plate – Catalan culinary mind games

The Catalan restaurant El Celler de Can Roca was voted the second-best restaurant in the world in 2011. As well as gastronomic traditions, the Catalan chefs here – three Roca brothers - also explore emotional intelligence, taste and odour memory, to create a unique and innovative culinary experience. The brothers opened the doors to their kitchen, in the city of Girona, to talk about their ideas of how to affect diners’ moods. They also explained their key dishes and technologies, such as ‘aroma distillation’.
