New gastronomy trends in Madrid find their inspiration in the roots and origins, and in everything pure and healthy that the land can offer. It is almost like saying that these ingredients don’t fail when other big structures stumble around us. After the reckless boom years, one can taste new values in the menus of Madrid: purity, unpretentiousness, tenderness and ecology. We selected the new hits in town.
